OUR HISTORY

FROM A SMALL COUNTER TO A VEGAS FAVORITE

AYCE started as a ten-seat sushi counter run by one family, one rice cooker and a single case of fish delivered every morning. Guests kept coming back for the same reason they do today: everything is cut to order and nothing sits.

Years later we expanded to Fort Apache Road and opened our second location on South Pecos Road with a full seafood program and Asian fusion kitchen, but the counter, the routine and the crew are still the heart of the room.

OUR TRADITION

OLD RULES, SHARP KNIVES

Rice seasoned and fanned by hand every two hours. Fish broken down in-house each morning. Knives sharpened on water stones before service. Nothing about the way we cook is shortcut for volume.
